It is believed to have come to Jamaica in the early to late 1530s, as the Jewish population of Portugal was having problems with religious persecution. Nobody knows if this is true but it is likely so. People move from place to place and they carry things with them as they go—culture, beliefs.   1. First, sift the salt and flour together.
  2. Then, cut the butter and shortening into small pieces however you like. You can then pour in the flour and the ice water.
  3. After that, you place the dough in a plastic bag to put in a fridge for thirty minutes, removing it afterward.
  4. Use your rolling pin to roll out the dough on a cutting board to a ¼ inch thickness.
  5. Go on to cut circles in the dough using an 8-oz glass.
  6. Pinching is next. Pinch the edges of a circle to make the casing. This will be what holds the fillings. Getting the hang now, huh?
  7. Now, place these casings on a tray, making sure it is greased, and then place that in the oven to part-bake.
  8. This should take about fifteen or so minutes with the right heat—345 to 350 degrees Fahrenheit. Then you can take them out.

  • Brown sugar
  • Grated Nutmeg
  • Butter

Method:

  1. Boil water and sugar together; do this until you get a syrupy result.
  2. Use low heat. Then add the grated coconut and nutmeg to the syrup.
  3. Stir this mixture; make sure it does not become a paste or thicken. Boil it again for about 15 minutes.
  4. Add the butter and stir thoroughly and long, making sure that the butter blends and does not show in the filling.

When this is done, put the filling in the casings and bake those for another twenty minutes. Remove these when ready and leave them to cool. Then, you can finally take a bite.
