This keto jalapeno cheddar waffles recipe can be a great snack, lunch or even breakfast! They are gluten free and savory cheddar waffles with the flavor of a jalapeno popper in waffle form! They only take a few minutes to make with just 1.1g net carbs each.

I know I swore off making these low carb cheese waffles but my husband was trying to keep his carbs down for awhile and I was running out of things to make him for breakfast. He’s not an egg eater so that limits what I can make him. But he is a chaffle fan and does love these types savory low carb waffles.

So today I thought I’d make these keto jalapeno cheddar waffles. They remind me of jalapeno poppers in waffle form. They have a hint of spice, though not too much because I cleaned out the ribs and seeds really well. And the rest is just cheesy goodness.

I love them too because they are really easy to make. You can a make a batch in an about 10 minutes total.Also they are gluten free because you don’t use any kind of flour, not even almond flour or coconut flour.

And they freeze well so you can use them for meal prep or meal planning. We ate these for breakfast but you could definitely eat them for a snack or even a keto appetizer and the carb count is only 1.1g net carbs.

Recipe ingredients I used and substitutions.

The simple ingredients I used for this recipe were ajalapeno peppers, sweet bell pepper, eggs, cauliflower rice, mozzarella shredded cheese, shredded cheddar cheese and parmesan cheese. Another option if you wanted to add even more flavor you could add some cooked bacon bits to the mix.

Jalapeno and Bell Peppers
You want to use fresh jalapenos for this recipe and I would not recommend the ones that are pickled and in a jar. You could substitute with a fresh poblano which is similar in taste but not as hot. The bell peppers are there for color and add a bit sweetness but you can skip them if you want and use more jalapenos.

You will want to take out the seeds and ribs to take out some of the heat from the jalapeno peppers. If you want them to be more spicy, keep the ribs in but still take out the seeds because they aren’t appetizing.

Cheeses
Shredded sharp cheddar cheese and parmesan is important to the taste of these chaffles but the mozzarella is used to keep them together and to make them crispy. I recommend using all of these cheeses but you could also use a Monterey Jack in place of the mozzarella if you want.

Cauliflower Rice
I usually make my own cauliflower rice by just adding a few florets to a food processor and pulsing until it looks like grains of rice. You could use frozen or fresh already made cauliflower rice if you want. Just make sure to drain all the excess liquid from them if there is any. Also you can use them frozen, you don’t have to precook them at all.

My favorite waffle iron for making chaffles.

I have two irons, one is an Oster waffle iron which is full size and now my Dash mini waffle maker. Both are inexpensive and excellent for keto waffles. However the Dash mini is GREAT for mini chaffles because they are the perfect size and make it easy to take them out compared to a full size, regular waffle maker. They usually sell them at Target and you can also get one one Amazon.

I used my Dash mini chaffle maker for these kind of recipes and they work perfectly! The small size is good because these are filling and I don’t think you need more than one for a snack or breakfast.

How to make keto jalapeno cheddar waffles.

Step 1: Plug in your waffle maker and heat it up according to the manufacturer’s instructions.

Step 2: While that is heating up clean and chop the peppers. For the jalapenos, clean out the seeds and ribs so they won’t be too hot. If you like the heat just leave in the ribs. For the bell pepper just clean out the seeds and finely dice both kinds.

Step 3: Get out a mixing bowl and add all the ingredients and mix well to make the chaffle mixture. No need to cook the cauliflower rice. You can use it frozen or raw.

Step 4: If you need to grease your waffle iron go ahead and do that. Your manufacturer’s instructions you tell you if you need to. Add a scoop of the cheese mixture right in the center of waffle maker and close the lid. Cook 2-3 minutes until it’s nicely browned and crispy.

Continue with the rest of the batter. Eat the finished chaffles immediately or freeze for another day. Store leftovers in an airtight container or baggie in the refrigerator. Reheat frozen chaffles in the microwave or toaster.

You can top these cheese chaffles with sour cream, fresh chopped cilantro, chopped green onions, avocado, or any other toppings you want. My husband uses his homemade hot sauce!

For a breakfast option eat this as is or make a breakfast sandwich out of them. For a lunch or dinner option you can use them as hamburger buns!

Keto Jalapeno Cheddar Waffles Recipe

These keto jalapeno popper chaffles can be a great snack, lunch or even breakfast! This savory chaffle recipe has a bit of a kick and only takes a few minutes to make. Only 1.1g net carbs each.

Ingredients

  • 1 jalapeno pepper, finely diced
  • 1 mini sweet pepper, finely diced
  • 2 eggs
  • ½ cup mozzarella, shredded
  • ½ cup cheddar cheese, shredded
  • ¼ cup Parmesan cheese, grated
  • ½ cup cauliflower rice

Instructions

  1. Clean the ribs and seeds out of the jalapeño and then finely dice both peppers.
  2. To rice the cauliflower, add florets to a food processor and pulse a few times until they resemble rice grains.
  3. In a bowl, beat the eggs and then add the rest of the ingredients.
  4. Heat up waffle iron. If you manufacturers directions suggests greasing first, please grease before cooking each waffle.
  5. Add a bit of waffle mixture to your waffle iron in the center and cook as you would any other waffle. Continue until mixture is gone. This made 6 small waffles for me.
  6. Eat immediately or if freezing, reheat in the microwave for 30 to 60 seconds. They will not be crunchy when reheating but they will taste delicious anyway.
