Healthy Roasted Brussels Sprouts are sweet, crispy and nutty. They're the perfect side dish to add to your weekly meal plan.

Ingredients

  • 1 pound brussels sprouts
  • 2 - 4 tablespoons vegetable oil
  • salt and pepper to taste

Instructions

  1. Preheat oven to 425°F Line a sheet pan with aluminum foil. Set aside.
  2. Rinse, trim and slice the brussels sprouts. You'll want to remove the outer leaves of the larger sprouts.
  3. In a bowl, toss the brussels sprouts with the vegetable oil, salt and pepper.
  4. Place the sprouts on the baking tray and roast in the oven for 20 to 30 minutes or until the sprouts are tender; flipping after 10 minutes. You want the sprouts to get brown, but be careful they don't burn.

Notes

  • You can drizzle balsamic vinegar or sprinkle Parmesan cheese on top of the sprouts when they're done cooking if you want.

    Tried this tonight, added whole slim carrots (about 1/2” thick). Made mistake with 425F produced with oven+grill, so a bit well-browned. But the taste of both carrots and sprouts was simply gorgeous. So that’s the current top sprouts treatment and I guess some other veggies like broccoli ( doesn’t it need something to make it palatable?)…
    I think a touch of soy sauce might be interesting…
