I get tired of fixing the same boring fish dish every few weeks that the kids tolerate but that they don’t love. I have been trying for years to find a recipe that they will love.
I finally did it!
These Alaska Baked Parmesan Cod Sliders are perfect for a healthy dinner for your family. My family loves panko crusted chicken, so I got to thinking that maybe I could do something similar with fish. On my last grocery run to Kroger, I stumbled upon some Alaska cod and thought that it would work.
It did.
I find that whitefish is a good place to start when it comes to introducing more seafood into your family’s meals. Whitefish is flakey and easy to pair with other flavors, allowing your kids to be more adventurous when it comes to eating fish.
The best whitefish comes from right here in the states. Wild-caught Alaska whitefish varieties, such as halibut, sablefish (black cod), sole, Alaska pollock and cod, provide many different delicious and easy ways for parents to cook for their family and to get them to eat more seafood.

Alaska Baked Parmesan Cod Sliders
Ingredients
- 8-ounce skinless cod fillets cut into small pieces
- 1/2 cup flour
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 eggs
- 1 1/2 cups seasoned panko breadcrumbs
- 1/2 cup grated Parmesan cheese
- 8 Hawaiian Dinner Rolls cut in half
- 4 tbsp prepared tartar sauce
Directions
Preheat the oven to 425° F. Line a baking sheet with a silicone liner or tin foil.
Cut the fillets into slider-sized pieces and pat dry with a paper towel. Season both sides with salt and black pepper.
In a large dinner plate, stir together the flour, salt, and black pepper.
In a medium-sized bowl, whisk together the eggs with a little splash of water.
In a third shallow dish stir together the seasoned panko with the Parmesan cheese.
Dredge each fillet in the flour, shaking off any excess.
Next, dip in the egg wash allowing excess to drip off.
Finally, gently press into the panko breadcrumbs being sure to coat all sides.
Place filets on the baking sheet and place on top rack of the oven.
Bake for 16-18 minutes, or until crispy and internal temp reaches 145 degrees.
Place 1/2 tbsp of tartar sauce on a half of Hawaiian dinner roll, add fish and lettuce if desired.
