This is my absolute FAVORITE autumn side dish. It is very easy to make, and yet, everyone RAVES about it and begs for the recipe. It has been a hit everywhere I’ve taken it, including Thanksgiving dinner last year.

Butternut Squash:

How to Make Butternut Squash Recipe

  1. Preheat oven to 350 degrees F.
  2. Slice the squash in half, scoop out the seeds, peel and dice it. (If you are going to be in a rush, you can also buy the already prepared chunks in your produce section.)
  3. Core and dice (or slice) the apples, skin on.
  4. Toss the apple and squash together in a baking dish.
  5. Slice off little slivers of the butter and distribute around the apple and squash.
  6. Combine the remaining ingredients and sprinkle on top of apple, squash and butter.
  7. Cover and bake for 45 – 50 minutes.

Ingredients

  • 1 butternut squash
  • 2 apples whatever variety you like
  • 1/3 cup brown sugar packed
  • 3 tbsp cold butter
  • 1 tbsp flour
  • 1 tsp salt
  • 1/4 tsp ground cinnamon
  • 1/4 tsp ground nutmeg

Instructions

  • Preheat oven to 350 degrees F.

    How do you peel butternut squash? Do you use a peeler or just cut the rind away from the good stuff with a paring knife?

    I just peel it with with a paring knife. The skin is kinda think, but if you had a really sharp peeler, that might work.
